I'm Miriam, aka the method and the madness behind Broken Spoon.
As a Chef, it is my responsibility to source and select only the highest quality ingredients to create a memorable experiences that will linger on your lips, and mind, for days to come. As a small business owner I feel it is my responsibility to utilize my platform to create a safe and inclusive environment for my customers and my community.
Both roles require knowing when to trim the fat and skim the scum to promote only the best balance of ingredients.
ABOUT THE CHEF
Miriam Kovacs is the Chef and creator at Broken Spoon. She is passionate about creating dishes that are not only healthy and delicious, but also nourish the soul and bring people together. Growing up with an older sister who shared her eating disorder and family members who often only communicated by leaving your favorite meals in the fridge, Miriam sees food as a gateway healer and the great unifier.
After graduating from Rutgers University with a Bachelor’s in Fine Arts, Miriam pursued her interest in food and attended The Culinary Institute of America in Hyde Park, NY. Through an internship during culinary school, she was able to put her interests in nutrition and healing to practice at the Cancer Treatment Centers of America based in Tulsa, OK. She later worked for renowned chefs like Marc Vetri and Jeffrey Michaud of the critically acclaimed Osteria Philly and Brill Williams of the original Inn at Sawmill Farm in Vermont, as well as for Di Bruno Bros. in Philadelphia, where she developed new menus, products and a juice bar for their Rittenhouse Square location along with coordinating special events and catering. In 2019, the menu Miriam designed for Kitch Organic in Red Bank, NJ made it to MeandGFree’s list of top 10 best organic restaurants in New York City.
After spending over 12 years in the restaurant industry, Miriam took the leap to launch Broken Spoon in 2016, beginning as a pop-up at Asbury Park’s Jams on the Sand and selling her acclaimed chilled noodle bowls to local businesses. She moved to Franklin in 2019 and opened Broken Spoon in November 2020.
